What was memorable about my volleymom trip to Spokane, Washington?
Dirty snow. A seemingly culturally biased incident at a hotel bar. A hangover.* The phone interview that I took in the computer room as a quiet place, only to be interrupted by a mother-daughter pair needing a printout (this was before the hangover). And a championship bracket loss on the last day of the tournament that took my daughter’s team out of contention.**
Not the most remarkable tournament trip of my volleymom career. But at least there was IncrediBurger & Eggs.
While IncrediBurger stood just a block-point-five from my hotel, I didn’t experience this establishment’s fine food until our last morning, the place where we went to drown our sorrows following the loss. So we breakfast-ed it (yes, our loss was that early), my family of three (who went to Spokane) each ordering one of their biscuit sandwiches.
Along with a batch of IncrediBurger’s home fries, my meal was delightful, just the thing to brighten up the day a bit. The flaky, thick biscuit could have been awesome all by itself, but as a wrap to buttery scrambled eggs and some oozy cheddar, it proved phenomenal. I used several methods to get it into my mouth – knife-and-forking it, going at it as a proper sandwich, and then, finally, just shoving what I could into my mouth with my fingers, the latter bringing me the most satisfaction.
I only wish I would have made it here earlier in my trip for a burger, their selection (including a Korean honey butter fried chicken sandwich and a PB&J burger) mightily intriguing. You know, I’m a burger gal. Not sure if I’ll ever be able to feature IncrediBurger on my Burger Quest list as the only IncrediBurger & Eggs location at this moment is Spokane (and without a volleyball tournament, I don’t think I’ll be back there anytime soon; even if there was a tournament, I’d maybe have to sit that one out), but if I ever do (perhaps under duress), I will certainly land myself a seat there just in time for a hamburger and fries.

*Before my hangover became a low point, a high point, I must admit, was hanging out (for hours, apparently) in the upscale, 21+ only Peacock Room Lounge (where the dress code, according to the website, is Smart Casual) at the Historic Davenport, a well-oiled machine of an old-school hotel. Before losing count of my gin and tonics, I supped on a delicious crab cake (apologies for the blurry picture, but I think that fuzziness captures some of my nostalgia for that night of which I’ve mostly forgotten).
**No worries (I know you were worried) – we won our nationals bid a month later at the West Coast National Qualifier in Reno.
